Tasty Tuesday: No Bake Bars

This week we made some no bake bars. I used another recipe from Pinterest {link here} that seemed like it had a simple list of ingredients and also still looked yummy enough to eat.

I added a slight change in ingredients since it was what I had on hand. Here's our tasty Tuesday snack:

No Bake Chocolate Oatmeal Bars

Ingredients Needed:
Butter
Vanilla Extract
Brown Sugar
Quick Cooking Oats
Semi-Sweet Chocolate Chips
Peanut Butter
9x9 Baking Dish

We started by using one of the sticks of butter to grease up the baking dish. I used a 7x11 dish since I apparently don't have a square one! Shameful!

We melted one cup of butter (two whole sticks) on the stove over medium heat.

After the butter had melted we added half a cup of brown sugar and one teaspoon of vanilla and mixed it all up.

Then, we added the quick oats into the butter mixture and cooked it on low for a couple of minutes until it was mixed evenly.

We put about half of the oats mixture into the bottom of our greased baking dish and gently patted it flat, covering the bottom of the dish. The rest will go on top when all finished, so remove from heat and set aside for later.

In a separate saucepan, we combined one cup of chocolate chips and half a cup of peanut butter. I happened to have only a half plus some cup of semi-sweet so I added in white chocolate chip morsels to complete the one cup measurement. We'll see how it turns out...

We heated and stirred it pretty much constantly until it was mostly smooth.

Then, we poured it over the oats mixture in the baking dish and spread it around with the back of the spoon.

To finish it, we crumbled the remaining oat mixture on top of the chocolate and very gently pressed it for the top layer.

It went into the refrigerator and sat overnight, though the recipe said you could take it out after a few hours. I imagine it is wanting you to wait until it has set, is all. It also suggested waiting for it to get back to room temperature before slicing it, so I took it out at nap time and cut it into delicious little pieces.

We had them for a yummy snack the next day! Both girls really seemed to enjoy them.
